Using Patsnap, there are multiple ways to track a specific companies patenting activity.

Giving a quick example, all it requires is the name/s of the competitors whose patent portfolio you want to track, and Patsnap will email over regular updates encompassing the companies new patenting applications, citations, changes in legal status and more.
